Ingredients

  • cup natural peanut butter 85g
  • ¼ teaspoon ground ginger or ¼ teaspoon freshly minced ginger
  • 1 tablespoon maple syrup or agave 21g
  • 2 tablespoons low sodium soy sauce 30mL
  • 1 teaspoon rice wine vinegar 5mL
  • ½ teaspoon sesame seeds 1.5g
  • ¼ teaspoon crushed red pepper flakes optional (0.35g)
  • 2-4 tablespoons hot water 30-60mL

Equipment

  • Medium mixing bowl
  • Whisk or fork
  • Measuring spoons and cups
  • Small jar with lid (optional)
  • Small blender or food processor (optional)

Method

  1. If using thick peanut butter, microwave for 15 seconds to soften.
  2. Combine peanut butter, ginger, maple syrup, soy sauce, rice vinegar, sesame seeds, and red pepper flakes in a bowl.
  3. Add 2 tablespoons hot water and whisk until completely smooth.
  4. Add additional hot water as needed for desired consistency (thicker for dipping, thinner for dressing).
  5. Taste and adjust seasonings as needed.

Notes

  • Store in an airtight container in the refrigerator for up to 7 days.
  • Sauce will thicken when refrigerated. Allow to come to room temperature and stir before using, or add a splash of hot water to thin.
  • For a spicier sauce, increase red pepper flakes or add sriracha.
  • For a lower-fat version, use powdered peanut butter reconstituted with water.
