Ingredients
  

For the Dressing
  • 1/2 cup extra-virgin olive oil highest quality available
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
Optional Additions
  • 1/2 teaspoon Dijon mustard helps with emulsification
  • 1 teaspoon honey for mild sweetness
  • 1 tablespoon fresh herbs parsley, basil, or dill, finely chopped
  • 1/4 teaspoon dried thyme
  • 1 pinch red pepper flakes for subtle heat

Method
 

  1. Combine lemon juice, red wine vinegar, garlic, oregano, salt, and pepper in a medium bowl. If using Dijon mustard, add it now. Let sit for 5 minutes to mellow the garlic.
  2. While whisking continuously, slowly drizzle in the olive oil until the mixture is emulsified and slightly thickened. Alternatively, combine all ingredients in a mason jar and shake vigorously.
  3. Taste the dressing and adjust seasonings as needed, adding more salt, lemon juice, or optional honey to balance flavors.
  4. If using fresh herbs, gently fold them in now to preserve their color and flavor.
  5. Transfer the dressing to a glass jar or airtight container and seal tightly.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld together.
  7. Before using, let stand at room temperature for 5-10 minutes (as olive oil solidifies when cold) and shake well, as separation is natural.

Notes

  • The dressing will keep in the refrigerator for up to 2 weeks. Shake well before each use.
  • For a milder garlic flavor, let the minced garlic sit in the lemon juice for 10 minutes before proceeding with the recipe.
  • Using a glass jar for storage is recommended as plastic containers can absorb flavors.
  • If you prefer a stronger herb flavor, double the amount of dried herbs or add more fresh herbs.
