  • 2 cups mango diced (about 2 medium mangoes)
  • 2 cups pineapple diced (about half a medium pineapple)
  • 2 cups watermelon diced
  • 1 cup strawberries sliced
For the Dressing
  • 1/4 cup fresh lime juice (approximately 2-3 limes)
  • 2 tablespoons honey or agave nectar for vegan option
  • 1/4 cup fresh cilantro chopped
  • 1 pinch sea salt
Optional Add-ins
  • 1 jalapeño seeded and finely diced
  • 1 tablespoon Tajín seasoning
  • 1/4 teaspoon chili powder

Method
 

  1. Dice mango, pineapple, and watermelon into uniform bite-size pieces, approximately 1/2-inch cubes.
  2. Slice strawberries into quarters or halves depending on their size.
  3. Combine all the prepared fruit in a large mixing bowl.
  4. In a small bowl, whisk together the fresh lime juice and honey until well combined.
  5. Drizzle the lime-honey mixture over the fruit, making sure to distribute it evenly.
  6. Toss the salad gently with a large spoon to coat all fruit pieces evenly with the dressing.
  7. Add chopped cilantro and a pinch of sea salt.
  8. Mix everything lightly one final time. If using optional ingredients like Tajín or chili powder, sprinkle them on now.
  9. Cover and refrigerate for at least 15 minutes before serving to allow the flavors to meld together.

Notes

  • For best results, choose ripe but firm fruits that will hold their shape when mixed.
  • The salad is best consumed within 24 hours but can be stored for up to 2 days in an airtight container.
  • For a spicier version, increase the amount of jalapeño or chili powder.
  • To make ahead, prepare the fruits and dressing separately, then combine just before serving.
