Ingredients
  

  • 4 tbsp olive oil
  • 2 tbsp yuzu juice
  • 1 tsp rice vinegar
  • 1 tsp dijon mustard
  • 1 tsp ginger, grated
  • 1 tsp honey
  • 1 pinch Kosher salt or to taste
  • 1/8 tsp white pepper or to taste

Method
 

  1. Grate fresh ginger using a microplane or fine grater.
  2. Measure all ingredients and add to a small jar with a tight-fitting lid.
  3. Secure lid and shake vigorously until well-combined.
  4. Alternatively, add all ingredients to a small bowl and whisk until thoroughly blended.
  5. Taste and adjust seasonings if needed.
  6. Use immediately or store refrigerated.

Notes

  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • Shake well before each use as natural separation will occur.
  • For a thicker dressing, add 1 teaspoon of mayonnaise or Greek yogurt.
  • If yuzu juice is unavailable, substitute with a mixture of 3 parts lemon juice, 1 part lime juice, and a splash of orange juice.
