Ingredients
  

  • 1 cup loosely packed fresh basil leaves
  • 2 tablespoons lemon juice from 1 lemon
  • 2 tablespoons white wine vinegar
  • 2 tablespoons honey
  • 1 garlic clove finely minced
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ½ cup olive oil

Equipment

  • Food processor or blender

  • Citrus juicer or reamer

Method
 

  1. Combine basil, lemon juice, white wine vinegar, honey, garlic, lemon zest, and salt in a food processor. Pulse about 20 times until basil is finely chopped.
  2. With the processor running, slowly drizzle in the olive oil until the dressing is smooth and well emulsified.
  3. Taste and adjust seasonings if needed.
  4. Use immediately or transfer to a jar for storage.

Notes

  • Store refrigerated in an airtight container for 3-4 days.
  • Shake well before using as separation is natural.
  • For a vegan version, substitute maple syrup for honey.
