Ingredients
  

Base Ingredients
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons fresh lime juice about 1-2 limes
  • 1 teaspoon chipotle powder
  • 2 tablespoons fresh cilantro finely chopped
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
Optional Add-ins
  • 1 teaspoon honey or agave nectar to balance heat
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon red onion finely chopped

Method
 

  1. In a medium bowl, combine olive oil, fresh lime juice, and chipotle powder. Whisk vigorously for about 30 seconds until well combined.
  2. Add minced garlic, chopped cilantro, salt, and black pepper to the mixture. Continue whisking until all ingredients are well emulsified.
  3. If using optional ingredients, add honey/agave, ground cumin, smoked paprika, and chopped red onion. Whisk to incorporate.
  4. Taste and adjust seasoning as needed - add more chipotle for heat, more lime for acidity, or more sweetener to balance flavors.
  5. Allow the dressing to sit for at least 15 minutes before using to let the flavors meld together.
  6. Give the dressing a final whisk before drizzling over your taco salad and toss to coat evenly.

Notes

  • For a creamier version, add 2 tablespoons of Greek yogurt or sour cream.
  • Dressing will keep in the refrigerator for up to one week in an airtight container.
  • Shake well before each use as natural separation will occur.
