Ingredients
  

For the Dressing
  • 4 oz blue cheese crumbles preferably aged variety
  • 2 tbsp mayonnaise full-fat recommended
  • 2 tbsp buttermilk
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste
Optional Additions
  • 1 small garlic clove minced
  • 1 tsp Dijon mustard
  • 1 tbsp fresh chives finely chopped
  • 1/2 tsp honey to balance acidity

Method
 

  1. In a medium mixing bowl, combine the blue cheese crumbles, mayonnaise, and buttermilk. Use the back of a fork to mash some of the blue cheese into the mixture while leaving some chunks for texture.
  2. Whisk until mostly smooth but still slightly chunky. The dressing should have visible blue cheese pieces for authentic texture.
  3. Add the fresh lemon juice and Worcestershire sauce, stirring gently to incorporate.
  4. Season with salt and freshly ground black pepper to taste. Start conservatively as blue cheese is naturally salty.
  5. If using optional ingredients, fold in the minced garlic, Dijon mustard, chopped chives, and honey.
  6. Assess the consistency - for a thinner dressing, add an additional tablespoon of buttermilk. For thicker, add more blue cheese or a touch more mayonnaise.
  7. Transfer to a jar or sealed container and chill for at least 15 minutes before serving to allow flavors to meld together.
  8. Give the dressing a quick stir before serving as separation may occur during refrigeration.

Notes

  • This dressing will keep in the refrigerator for up to 5 days in an airtight container.
  • For a smoother texture, blend the ingredients in a food processor.
  • To make a lighter version, substitute Greek yogurt for the mayonnaise.
  • For best flavor, use a good quality blue cheese like Roquefort or Gorgonzola.
  • Let the dressing sit at room temperature for 10-15 minutes before serving to enhance flavors.
