Ingredients
  

  • 1 1/2 pounds cooked lobster meat, cut into 3/4 inch pieces
  • 1/3 cup mayonnaise
  • 1 1/2 tablespoons lemon juice
  • 1/4 cup finely chopped celery
  • 1 tablespoon thinly sliced chives, plus more for garnish
  • Salt and pepper to taste

Method
 

  1. Combine lobster meat, mayonnaise, lemon juice, celery, and chives in a bowl.
  2. Season with salt and pepper to taste.
  3. Gently fold ingredients together until just combined.
  4. Chill for 30 minutes to allow flavors to develop.
  5. Garnish with additional chives before serving.

Notes

  • For best results, use freshly cooked lobster meat and serve within 2 days.
  • Store in an airtight container in the refrigerator.
  • This salad can be served on its own, in a roll, or atop mixed greens for a complete meal.
