Ingredients
  

  • 12 ounce bag frozen corn kernels, thawed
  • 1 green pepper, finely diced
  • ½ cup finely diced red onion
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 Tablespoon taco seasoning
  • to taste black pepper
  • 10.25 ounce bag Fritos, crushed (or Chili Cheese Fritos)

Method
 

  1. Combine corn, green pepper, red onion, and cheddar cheese in a large bowl.
  2. Add mayonnaise and taco seasoning, stirring until thoroughly combined.
  3. Season with black pepper to taste.
  4. Just before serving, gently fold in crushed Fritos to maintain crunchiness.
  5. Serve immediately for best texture.

Notes

  • For make-ahead preparation, store the corn mixture separately from Fritos and combine just before serving.
  • The base mixture can be refrigerated for up to 3 days.
  • For a lighter version, substitute half the mayonnaise with Greek yogurt.
