Ingredients
  

  • 1 small shallot or one lobe of a large shallot, peeled, cored and quartered
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Equipment

  • Blender or immersion blender
  • Measuring cups and spoons
  • Glass jar with lid (for storage)

Method
 

  1. Place the quartered shallot, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a blender.
  2. Blend on medium-high speed for about 30 seconds until completely smooth.
  3. Taste and adjust seasonings if needed.
  4. Transfer to a serving container or storage jar if not using immediately.

Notes

  • Store in a sealed jar in the refrigerator for up to 1 week.
  • If the dressing solidifies in the refrigerator, bring to room temperature before serving or run the closed jar under warm water.
  • Shake well before each use as natural separation will occur.
  • For a sugar-free version, substitute honey with stevia or omit sweetener entirely.
