Ingredients
  

  • 1 rotisserie chicken (about 5 cups of pulled chicken)
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 3/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon salt

Method
 

  1. Remove all meat from the rotisserie chicken and chop or shred into bite-sized pieces.
  2. In a medium bowl, mix mayonnaise, lemon juice, poultry seasoning, and salt until well combined.
  3. In a large bowl, combine the chicken, celery, and onion.
  4. Pour the mayonnaise mixture over the chicken mixture and stir gently until everything is evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
