Ingredients
  

  • ½ cup mayonnaise
  • ½ lemon juice of about 1½ tablespoons
  • ½ tablespoon rice wine vinegar
  • 2 tablespoons fresh dill minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 pound imitation crab shredded
  • 1 Roma tomato diced
  • ½ cucumber halved and sliced very thin
  • 2 ribs celery very thinly sliced
  • ½ red onion minced

Method
 

  1. Whisk together the mayonnaise, lemon juice, rice wine vinegar, dill, salt, and pepper in a small bowl.
  2. In a large mixing bowl, combine the shredded imitation crab, tomato, cucumber, celery, and red onion.
  3. Pour the dressing over the crab mixture and gently toss until everything is well coated.
  4. Chill for at least 30 minutes before serving cold.

Notes

  • Store in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute half the mayonnaise with Greek yogurt.
  • Add diced avocado just before serving for extra creaminess.
