Ingredients

For the Salad Base
  • 4 cups celery stalks sliced thin on a diagonal
  • 1 tablespoon fresh parsley chopped
For the Dressing
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
Optional Add-ins
  • 1/4 cup Parmesan cheese shaved
  • 2 tablespoons pine nuts toasted
  • 1 small shallot thinly sliced
  • 1 small crisp apple julienned
  • 1/2 teaspoon lemon zest for extra brightness

Equipment

  • Large mixing bowl
  • Sharp knife
  • Cutting board
  • Whisk

Method

  1. Trim the celery stalks, removing any tough ends and strings. Slice them thinly on a diagonal for visual appeal and maximum crunch.
  2. In a large bowl, whisk together lemon juice, extra-virgin olive oil, salt, and freshly ground black pepper until well emulsified.
  3. Add the sliced celery to the bowl with the dressing and toss to coat evenly. Allow to marinate for 5 minutes to slightly soften and absorb flavors.
  4. If using any optional add-ins like Parmesan, pine nuts, or shallots, gently fold them in now, reserving a small amount for garnish.
  5. Sprinkle chopped fresh parsley over the salad and toss gently to incorporate.
  6. Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice to balance the flavors.
  7. Serve immediately for maximum crispness, or chill for 15 minutes for a colder texture. Garnish with additional parsley and any reserved add-ins just before serving.

Notes

  • For the crispest texture, prepare this salad just before serving.
  • Use the inner, lighter stalks of celery for a milder flavor profile.
  • To make this salad ahead, store the dressing and prepared celery separately until ready to serve.
  • Add a pinch of red pepper flakes for a subtle heat that complements the cool celery.
