Ingredients
  

  • 6 cups mixed greens or lettuce of choice, torn into bite-size pieces loosely packed
  • 1 small English cucumber, thinly sliced or ½ large
  • 1 cup cherry tomatoes, halved
  • 1 small carrot, grated with a vegetable peeler or sliced
  • 1 whole avocado, peeled, pitted and chopped
  • 2 ounces goat cheese, crumbled or feta or shaved Parmesan
  • 6 tablespoons homemade vinaigrette or dressing of choice

  • Salad tongs or serving spoons
  • Vegetable peeler

Method
 

  1. Place the mixed greens in a large bowl.
  2. Add the cucumber, cherry tomatoes, and carrot on top.
  3. Drizzle with vinaigrette or dressing of choice, a little at a time, tossing gently until evenly coated.
  4. Add the avocado and goat cheese, tossing gently to incorporate.
  5. Serve immediately.

Notes

Storage:
  • For meal prep, store components separately and assemble just before serving.
  • Undressed greens last 5-7 days in the refrigerator when properly stored.
