Ingredients
  

For the Salad
  • 2 cups mixed greens baby spinach, arugula, or spring mix
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber thinly sliced
  • 1/4 red onion thinly sliced
  • 1/4 cup feta cheese crumbled
For the Dressing
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • salt and freshly ground black pepper to taste
Optional Additions
  • 1 clove garlic minced
  • 1 tablespoon fresh basil leaves torn or chiffonade
  • 1 tablespoon fresh oregano chopped
  • 1 avocado diced
  • 2 tablespoons pine nuts toasted
  • 1 teaspoon honey or maple syrup for dressing sweetness
  • 1/2 lemon juiced

Method
 

  1. Wash and thoroughly dry the mixed greens using a salad spinner or clean kitchen towels.
  2. Halve the cherry tomatoes along their equator (not through the stem end).
  3. Slice the cucumber into thin, even pieces about 1/8-inch thick.
  4. Slice the red onion very thinly. For milder flavor, soak in ice water for 10 minutes, then drain and pat dry.
  5. In a large salad bowl, gently combine the mixed greens, halved tomatoes, cucumber slices, and red onion.
  6. In a small bowl, whisk together the olive oil and balsamic vinegar until emulsified. Add any optional dressing ingredients if using.
  7. Drizzle the dressing evenly over the salad ingredients, using just enough to lightly coat everything.
  8. Season with salt and freshly ground black pepper to taste.
  9. Toss the salad very gently using salad tongs or two large spoons.
  10. Top with crumbled feta cheese and any optional toppings just before serving.
  11. Serve immediately for best flavor and texture.

Notes

  • For meal prep, store all components separately and combine just before serving.
  • Cherry tomatoes are best kept at room temperature for maximum flavor.
  • If preparing ahead, add the dressing just before serving to prevent soggy greens.
  • Leftover undressed salad will keep for up to 2 days in an airtight container in the refrigerator.
  • For a more substantial meal, add grilled chicken, shrimp, or chickpeas.
