Ingredients
  

For the Salad Base
  • 2 ripe avocados diced into 1/2-inch cubes
  • 1 lime juiced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 4 cups mixed green lettuce
  • salt and pepper to taste
Optional Add-ins
  • 1 small jalapeño seeded and finely diced
  • 1/2 cup black beans rinsed and drained
  • 1/4 cup cotija or feta cheese crumbled
  • 1 small bell pepper diced
  • 1 small cucumber diced
  • 1/2 teaspoon ground cumin
  • 1 clove garlic minced

Method
 

  1. Dice the avocados and immediately place them in a large bowl.
  2. Pour fresh lime juice over the avocados and gently toss to coat all pieces to prevent browning.
  3. Add the halved cherry tomatoes, thinly sliced red onion, and chopped cilantro to the bowl.
  4. If using any optional ingredients (jalapeño, black beans, cheese, bell peppers, cucumber, cumin, or garlic), fold them in now.
  5. Add the mixed greens to the bowl.
  6. Season with salt and pepper to taste.
  7. Gently toss all ingredients together, being careful not to crush the avocado pieces.
  8. Serve immediately or chill for up to 15 minutes before serving for best results.

Notes

  • For the freshest presentation, prepare all components ahead of time but only dice the avocados and assemble the salad just before serving.
  • The lime juice helps prevent the avocados from browning, but the salad is still best enjoyed immediately after preparation.
  • To make this a complete meal, add grilled chicken, shrimp, or roasted chickpeas for protein.
  • For a dairy-free version, simply omit the optional cheese or replace with a plant-based alternative.
