Ingredients
  

For the Salad
  • 1 can (14 oz) hearts of palm drained and sliced
  • 4 cups mixed greens arugula, spinach, or spring mix
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1/2 red onion thinly sliced (optional)
  • 1 avocado sliced (optional)
  • 1/4 cup fresh cilantro leaves optional
  • 2 tablespoons toasted pine nuts or pepitas optional
For the Dressing
  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Method
 

  1. Drain the hearts of palm thoroughly and slice into 1/2-inch rounds or bite-sized pieces.
  2. In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
  3. Add any optional ingredients like red onion, bell pepper, or avocado.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper until emulsified.
  5. Add the hearts of palm to the vegetable mixture.
  6. Drizzle with the prepared dressing and toss gently to coat all ingredients evenly.
  7. If using, sprinkle with cilantro leaves and toasted nuts just before serving.
  8. Serve immediately for best flavor and texture.

Notes

  • For a more substantial meal, add chickpeas or white beans to this salad.
  • The undressed components can be prepared up to 3 days in advance and stored separately in the refrigerator.
  • Hearts of palm have a mild flavor similar to artichoke hearts – they pair well with bright citrus dressings.
