Ingredients
  

For the Salad
  • 4 cups little gem lettuce washed, dried and torn into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
For the Dressing
  • 2 tablespoons olive oil extra virgin preferred
  • 1 tablespoon lemon juice freshly squeezed
  • salt to taste
  • black pepper freshly ground, to taste
Optional Add-ins
  • 1 avocado diced
  • 1/4 cup pine nuts toasted
  • 1/4 cup fresh herbs mint, basil, or dill, chopped

Method
 

  1. Wash and thoroughly dry the little gem lettuce. Remove any damaged outer leaves and tear into bite-sized pieces.
  2. Prepare the vegetables: halve the cherry tomatoes, dice the cucumber into ½-inch pieces, and slice the red onion as thinly as possible.
  3. Combine the prepared lettuce, tomatoes, cucumber, and red onion in a large salad bowl.
  4. In a small bowl, whisk together the olive oil and lemon juice until emulsified. Season with salt and freshly ground black pepper to taste.
  5. Drizzle about two-thirds of the vinaigrette over the salad ingredients and gently toss until evenly coated.
  6. Taste and add more dressing if needed.
  7. Top with crumbled feta cheese and any optional add-ins you're using (avocado, toasted pine nuts, or fresh herbs).
  8. Serve immediately for best texture and flavor.

Notes

  • For the freshest experience, only dress the portion of salad you plan to eat immediately.
  • Little gem lettuce is best when very fresh - look for compact heads with crisp leaves and no browning.
  • To make this salad a complete meal, add protein like grilled chicken, roasted chickpeas, or hard-boiled eggs.
