Ingredients
  

For the Salad Base
  • 4 cups mixed greens arugula, spinach, and romaine work well
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1 carrot shredded
  • 1/4 red onion thinly sliced
  • 1/2 cup chickpeas rinsed and drained (optional)
For the Tahini Dressing
  • 3 tbsp tahini use high-quality for best results
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp water plus more if needed to thin
  • 1 small garlic clove minced
  • salt and pepper to taste
Optional Toppings
  • 1/4 cup feta cheese crumbled (omit for vegan option)
  • 2 tbsp sesame seeds toasted
  • 1/2 avocado sliced
  • 2 tbsp fresh herbs such as parsley or mint, chopped

Equipment

Method
 

  1. Combine mixed greens, cucumber, cherry tomatoes, carrot, red onion, and chickpeas (if using) in a large bowl.
  2. In a separate small bowl, whisk together tahini, lemon juice, and water until smooth.
  3. Add minced garlic, salt, and pepper to the dressing and whisk again. Add more water if needed to achieve a pourable consistency.
  4. Drizzle the tahini dressing over the vegetables, starting with about two-thirds and adding more as needed.
  5. Gently toss the salad to coat all ingredients evenly with the dressing.
  6. If using, add feta cheese, avocado, and herbs, giving the salad one final gentle toss.
  7. Sprinkle with toasted sesame seeds just before serving.
  8. Serve immediately, or chill for 15 minutes to allow flavors to develop.

Notes

  • For meal prep, store dressing separately from vegetables and combine just before serving.
  • This salad can be made up to a day ahead if kept undressed in the refrigerator.
  • The tahini dressing will thicken when refrigerated - simply add a splash of water and whisk to restore consistency.
  • For a protein boost, add grilled chicken, tofu, or additional chickpeas.
