Ingredients
  

For the Salad
  • 2 cups fresh pineapple chunks ripe but firm
  • 4 cups mixed greens
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper sliced
  • 1/4 cup red onion thinly sliced
  • 2 tbsp fresh mint leaves torn or chopped
For the Dressing
  • 3 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt and pepper to taste
Optional Add-ins
  • 1/2 cup mango diced
  • 1/4 cup toasted coconut flakes
  • 2 tbsp cilantro chopped
  • 1/2 avocado diced
  • 2 tbsp macadamia nuts chopped

Method
 

  1. In a large bowl, combine the pineapple chunks, mixed greens, cucumber, red bell pepper, red onion, and mint leaves.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  4. For best flavor, allow the salad to chill for 15 minutes before serving.
  5. If using optional add-ins like mango, coconut, cilantro, avocado, or nuts, fold them in just before serving.

Notes

  • For meal prep, store the dressing separately and add just before serving.
  • To reduce the enzyme effect that can make your mouth tingle, soak fresh pineapple in salt water for 10 minutes, then rinse and pat dry.
  • If you prefer a sweeter dressing, add an extra 1/2 teaspoon of honey.
  • Add grilled chicken, shrimp, or tofu to make this a complete meal.
