Ingredients
  

  • 1/4 cup Greek yogurt
  • 2 tbsp salsa
  • 1 tbsp lime juice
  • 1 tsp honey or agave syrup
  • 1 tbsp finely chopped cilantro
  • 2 tbsp chopped green onion
  • 1 pinch kosher salt to taste
  • 1/2 tsp cumin
  • 1/2 tsp Mexican oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne optional
  • 2 tsp oil avocado or olive oil
  • 8 oz ground turkey
  • 1/2 medium onion finely chopped
  • 1/4 cup salsa
  • 1/4 cup Hatch green chiles or salsa verde
  • 2 tbsp water
  • 2 tbsp finely chopped cilantro
  • 6 cups salad greens
  • 1 avocado sliced or chopped
  • 1/2 cup shredded cheddar
  • 1/2 cup quartered cherry tomatoes
  • 1 handful crushed tortilla chips optional

Method
 

  1. Whisk all dressing ingredients together in a bowl. Set aside or refrigerate until ready to use.
  2. Mix all seasoning ingredients in a small bowl.
  3. Heat oil in a large pan over medium heat. Add turkey, seasoning blend, and chopped onion.
  4. Break the turkey apart while cooking, mixing it with the seasoning and onions until well combined.
  5. Cook for 4-5 minutes until turkey is browned and no longer pink.
  6. Add salsa, green chiles, water, and cilantro. Cover and reduce heat to low.
  7. Simmer on low heat for 15 minutes to develop flavors.
  8. Remove lid and stir. If excess liquid remains, increase heat to medium and cook until most liquid evaporates.
  9. Divide salad greens between two bowls, top with turkey mixture and toppings.
  10. Drizzle with dressing and serve immediately.

Notes

Storage:
  • Store components separately in the refrigerator - turkey mixture for up to 4 days, dressing for up to 5 days, and prepped vegetables for 1-2 days.
  • For meal prep, keep all elements separate and assemble just before eating.
Variations:
  • Add black beans for extra protein, substitute ground chicken, or make it vegetarian with plant-based crumbles.
  • For keto diets, omit honey in the dressing and skip the tortilla chips.
