Method
- Whisk all dressing ingredients together in a bowl. Set aside or refrigerate until ready to use.
- Mix all seasoning ingredients in a small bowl.
- Heat oil in a large pan over medium heat. Add turkey, seasoning blend, and chopped onion.
- Break the turkey apart while cooking, mixing it with the seasoning and onions until well combined.
- Cook for 4-5 minutes until turkey is browned and no longer pink.
- Add salsa, green chiles, water, and cilantro. Cover and reduce heat to low.
- Simmer on low heat for 15 minutes to develop flavors.
- Remove lid and stir. If excess liquid remains, increase heat to medium and cook until most liquid evaporates.
- Divide salad greens between two bowls, top with turkey mixture and toppings.
- Drizzle with dressing and serve immediately.

Storage:
- Store components separately in the refrigerator - turkey mixture for up to 4 days, dressing for up to 5 days, and prepped vegetables for 1-2 days.
- For meal prep, keep all elements separate and assemble just before eating.
- Add black beans for extra protein, substitute ground chicken, or make it vegetarian with plant-based crumbles.
- For keto diets, omit honey in the dressing and skip the tortilla chips.
