Ingredients
  

For the Dressing
  • 1/2 cup olive oil extra virgin preferred
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon orange zest
  • 1 teaspoon honey
  • 1 small garlic clove minced
  • 1/4 teaspoon paprika optional
  • 1 tablespoon shallot finely minced, optional
  • 1/2 teaspoon Dijon mustard optional
  • Salt and freshly ground black pepper to taste

Method
 

  1. In a medium bowl, whisk together the olive oil, red wine vinegar, lime juice, and orange zest until well combined.
  2. Add the honey and minced garlic to the mixture, then whisk vigorously until the dressing begins to emulsify and thicken slightly.
  3. If using optional ingredients (paprika, shallot, Dijon mustard), add them now and whisk to incorporate.
  4. Season with salt and freshly ground black pepper to taste, adjusting flavors as needed.
  5. Transfer the catalina dressing to a clean glass jar with a tight-fitting lid. Seal securely and refrigerate for at least 30 minutes before using to allow the flavors to meld together.
  6. Before serving, shake the jar vigorously to re-emulsify the dressing, as separation is natural.

Notes

  • Dressing will keep in the refrigerator for 7-10 days when stored in an airtight container.
  • For a vegan version, substitute maple syrup or agave for the honey.
  • Add 1 tablespoon of tomato paste for a more traditional red catalina color.
  • The dressing naturally separates when stored - this is normal and a sign of no artificial emulsifiers.
