Ingredients

  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup shredded carrots
  • 1/4 cup red onion thinly sliced
  • 2 tbsp shredded cheddar cheese optional
  • 1/4 cup croutons
Optional Add-ins
  • 1/4 cup fresh blueberries
  • 1/4 cup sliced strawberries
  • 1/4 cup diced apple
  • 2 tbsp roasted almonds or granola
  • 1/2 avocado sliced
Dressing
  • 2 tbsp zesty vinaigrette
  • salt and pepper to taste

Method
 

  1. Place the mixed greens in a large bowl, making sure they're dry and fluffy for best texture.
  2. Add the diced chicken strips, distributing them evenly throughout the greens.
  3. Arrange the halved cherry tomatoes, diced cucumber, shredded carrots, and thinly sliced red onion over the chicken and greens.
  4. If using optional fruits, add blueberries, strawberries, and diced apple in separate sections on top of the salad.
  5. Sprinkle the shredded cheddar cheese evenly over the salad.
  6. Add the croutons and optional nuts or granola just before serving to maintain their crunch.
  7. Drizzle the zesty vinaigrette around the salad, then season with salt and freshly cracked pepper.
  8. Gently toss all ingredients just before eating, being careful not to crush the more delicate components.
