Ingredients
  

  • 1/2 cup plain Greek yogurt
  • 6 ounces feta cheese
  • Juice of 1 lemon approximately 2-3 tablespoons
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic grated
  • Water up to ½ cup (for adjusting consistency)
  • Salt and fresh ground black pepper to taste optional

Method
 

  1. Add Greek yogurt, feta cheese, grated garlic, lemon juice, and olive oil to a blender or food processor.
  2. Add 2-3 tablespoons of water to start.
  3. Blend until smooth and creamy, starting on low speed and gradually increasing.
  4. Add more water, 1 tablespoon at a time, until reaching desired consistency.
  5. Taste and adjust seasonings if needed.
  6. Transfer to a storage container and refrigerate until ready to use.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • The dressing will thicken when chilled, so you may need to add a splash of water before using.
  • For a thinner dressing, add more water; for a thicker dip, use less.
