Ingredients
  

For the Dressing
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons fresh lime juice about 2 limes
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or agave nectar for vegan option
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon ground cumin
  • 1 clove garlic minced
  • 2 tablespoons fresh cilantro finely chopped
  • Salt and freshly ground black pepper to taste
Optional Additions
  • 1/4 teaspoon Mexican oregano optional
  • 1 small jalapeƱo seeds removed and finely diced, optional for extra heat
  • 1 teaspoon lime zest optional for enhanced citrus flavor

Method
 

  1. In a medium bowl, combine lime juice, apple cider vinegar, honey, chipotle powder, cumin, minced garlic, chopped cilantro, salt, and pepper.
  2. Whisk these ingredients vigorously until the honey completely dissolves and all spices are evenly distributed (about 30 seconds).
  3. While continuing to whisk, slowly drizzle in the olive oil in a thin stream to achieve proper emulsification.
  4. Taste the dressing and adjust seasonings as needed - add more chipotle for heat, lime for tang, or honey for sweetness.
  5. If the dressing seems too thick, add a teaspoon of water and whisk again.
  6. Transfer the finished dressing to a glass jar with a tight-fitting lid.
  7. Refrigerate for at least 30 minutes before serving to allow flavors to fully develop.
  8. Before serving, let stand for 5 minutes at room temperature, then shake vigorously as the oil may solidify slightly when cold.

Notes

  • This dressing will keep in the refrigerator for up to 7 days in an airtight container.
  • Natural separation will occur - simply shake well before each use.
  • For a smoother texture, blend all ingredients in a blender or food processor.
  • For a creamier variation, add half an avocado or 2 tablespoons of Greek yogurt when blending.
