  • 1/4 cup Dijon mustard smooth or whole grain
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup for vegan option
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic finely minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
Optional Add-ins
  • 1 tablespoon fresh lemon juice for extra brightness
  • 1 teaspoon fresh herbs thyme or tarragon
  • 1/4 teaspoon Dijon mustard seeds for texture

Method
 

  1. In a medium bowl, whisk together the Dijon mustard and apple cider vinegar until completely combined.
  2. While continuously whisking, slowly drizzle in the olive oil in a thin, steady stream until fully emulsified and slightly thickened.
  3. Add the honey, minced garlic, salt, and pepper to the mixture. Whisk thoroughly until all ingredients are evenly incorporated.
  4. Taste and adjust seasonings as needed, adding more honey for sweetness or vinegar for tanginess until the flavor is balanced to your preference.
  5. If using any optional add-ins, stir them in now.
  6. Transfer the dressing to an airtight container or mason jar and refrigerate for at least 30 minutes before using to allow flavors to meld together.
  7. Shake well before each use, as natural separation may occur during storage.

Notes

  • For a thinner dressing, add water one teaspoon at a time until desired consistency is reached.
  • Store in the refrigerator for up to one week.
  • For a creamier version, add 2 tablespoons of Greek yogurt or mayonnaise.
