- Add chopped sweet onion, brown sugar, apple cider vinegar, Dijon mustard, celery salt, black pepper, and poppy seeds to the bowl of a food processor.
- Process until completely smooth, about 30-45 seconds.
- With the machine running, slowly pour the olive oil through the feed tube in a steady stream until the dressing is emulsified, about 30 seconds.
- Transfer to a glass jar with a tight-fitting lid and refrigerate until ready to use.
Notes
- Store in the refrigerator for up to 10 days.
- Natural separation may occur during storage - simply shake well before using.
- For a thinner consistency, add water or additional vinegar one tablespoon at a time.
- For variations, try adding fresh herbs, citrus juice, or a touch of honey instead of brown sugar.
