Ingredients
  

  • 1 medium sweet onion (8 ounces), roughly chopped
  • ½ cup packed light brown sugar
  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 teaspoons celery salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon poppy seeds
  • 1 cup olive oil

Method
 

  1. Add chopped sweet onion, brown sugar, apple cider vinegar, Dijon mustard, celery salt, black pepper, and poppy seeds to the bowl of a food processor.
  2. Process until completely smooth, about 30-45 seconds.
  3. With the machine running, slowly pour the olive oil through the feed tube in a steady stream until the dressing is emulsified, about 30 seconds.
  4. Transfer to a glass jar with a tight-fitting lid and refrigerate until ready to use.

Notes

  • Store in the refrigerator for up to 10 days.
  • Natural separation may occur during storage - simply shake well before using.
  • For a thinner consistency, add water or additional vinegar one tablespoon at a time.
  • For variations, try adding fresh herbs, citrus juice, or a touch of honey instead of brown sugar.
