Ingredients
  

Western Salad Dressing Base
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • 1/2 teaspoon dried oregano
  • salt and freshly ground black pepper to taste
Optional Additions
  • 1/4 teaspoon dried thyme optional
  • 1/4 teaspoon dried basil optional
  • 1 teaspoon fresh parsley finely chopped, optional
  • 1/4 teaspoon onion powder optional
  • 1 pinch red pepper flakes optional

Method
 

  1. In a medium bowl, combine the apple cider vinegar, honey, Dijon mustard, minced garlic, dried oregano (and any optional dried herbs), salt, and pepper. Whisk until honey is fully dissolved and mixture is uniform.
  2. While continuously whisking, slowly drizzle in the olive oil in a thin stream to create an emulsion.
  3. Continue whisking for about 30 seconds after all oil has been added until the dressing thickens slightly.
  4. Taste the dressing and adjust the seasoning as needed (more vinegar for acidity, more honey for sweetness, more salt or herbs for depth).
  5. If using fresh herbs like parsley, fold them in gently after the dressing is emulsified.
  6. Transfer to a mason jar or airtight container with a tight-fitting lid.
  7. Refrigerate for at least 30 minutes before using to allow flavors to meld.
  8. Shake vigorously before serving to recombine ingredients.

Notes

  • This dressing will keep in the refrigerator for up to one week.
  • For a creamier version, add 1 tablespoon of Greek yogurt or mayonnaise.
  • The olive oil may solidify when chilled - this is normal. Let it sit at room temperature for 10-15 minutes before using.
  • Fresh herbs will provide more vibrant flavor if available.
  • For a vegan version, substitute the honey with maple syrup or agave nectar.
