Ingredients
  

  • 1 cup dried quinoa
  • 1 (15-ounce) can chickpeas or 1 ½ cups cooked chickpeas drained and rinsed
  • 1/2 medium English cucumber, diced 1 cup

Equipment

  • Fine mesh strainer
  • Medium saucepan
  • Large mixing bowl

Method
 

  1. Rinse quinoa thoroughly under cool water. Place in saucepan with 2 cups water, bring to boil, then reduce heat and simmer for 10-15 minutes until water is absorbed.
  2. Remove from heat, cover, and let rest for 5 minutes. Fluff with fork and allow to cool slightly.
  3. Whisk together olive oil, vinegar, mustard, honey, salt, and pepper in a small bowl.

Notes

  • For protein boost, add grilled chicken, shrimp, or tofu
  • Substitute vegetables based on what's in season
  • For meal prep, store in airtight container for up to 5 days
  • Store dressing separately if preparing ahead
