Ingredients
  

For the Salad
  • 1 head of red leaf lettuce cut into bite-sized pieces
  • 1 head of romaine lettuce cut into bite-sized pieces
  • 3 stalks of celery thinly sliced
  • 1 bunch of green onions thinly sliced
  • 2 cooked chicken breasts cut into ½" pieces
  • ¼ cup peanuts
  • ¼ cup sliced almonds
  • 1 cup canned or fresh mandarin oranges
  • 1 tablespoon minced fresh mint
  • 1 tablespoon minced fresh basil
  • Coarse salt and pepper to taste
For the Dressing
  • cup oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons sugar
  • 1 tablespoon chopped fresh parsley
  • Coarse salt and pepper to taste

Equipment

Method
 

  1. Prepare the dressing by whisking together oil, red wine vinegar, sugar, and chopped parsley until emulsified. Season with salt and pepper to taste.
  2. In a large serving bowl, combine all salad ingredients from lettuce to basil.
  3. Toss with dressing just before serving, adding salt and pepper to taste.
  4. Serve immediately for best freshness and texture.

  • Store dressing separately from salad ingredients if preparing in advance.
