Ingredients
  

For the Salad
  • 4 cups seedless watermelon cubed (about ½ medium watermelon)
  • 1 cup cucumber diced (approximately 1 medium cucumber)
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • salt and freshly ground black pepper to taste
Optional Add-ins
  • 2 tablespoons honey for extra sweetness
  • 1/4 cup pine nuts toasted, for crunch
  • 1/2 teaspoon red pepper flakes for heat
  • 1 small avocado diced, for creaminess
  • 1/4 cup fresh basil leaves torn, for herbal complexity

Method
 

  1. Select a ripe, sweet watermelon and cut it into 1-inch cubes, removing any seeds. Place in a large serving bowl.
  2. Wash and dice the cucumber into ½-inch pieces. Add to the bowl with the watermelon.
  3. Thinly slice the red onion. For a milder flavor, soak sliced onion in cold water for 10 minutes, then drain and pat dry.
  4. Wash and chop the fresh mint leaves.
  5. Sprinkle the crumbled feta cheese, chopped mint, and sliced red onion over the watermelon and cucumber.
  6. In a small jar or bowl, combine fresh lime juice, extra-virgin olive oil, salt, and freshly ground black pepper. If using optional honey, add it to the dressing and whisk until well combined.
  7. Just before serving, drizzle the dressing over the salad and gently toss all ingredients together. Be careful not to over-mix.
  8. Taste and adjust seasonings as needed.
  9. Serve immediately for the freshest taste and best texture, or chill for up to 15 minutes before bringing to the table.

Notes

  • For best results, use cold watermelon and cucumber straight from the refrigerator.
  • This salad is best enjoyed immediately after preparation, but components can be prepped ahead and assembled just before serving.
