Ingredients
  

  • 2 pounds seedless watermelon (about 6 cups), cut into 1/2-inch cubes
  • 6 ounces feta cheese, cut into 1/2-inch cubes (about 1 cup)
  • 1 Persian cucumber, halved lengthwise, seeded, and thinly sliced crosswise
  • 1/4 medium red onion, thinly sliced (about 1/3 cup)
  • 1 medium bunch fresh mint leaves, thinly sliced (about 1/3 cup), plus more for garnish
  • 2 tablespoons roasted, unsalted shelled pistachios, coarsely chopped
  • 1 tablespoon finely grated lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Flaky salt, for finishing

Method
 

  1. Combine watermelon cubes, sliced cucumber, red onion, feta cheese, and sliced mint in a large bowl.
  2. In a small bowl, whisk together rice vinegar, olive oil, kosher salt, and black pepper.
  3. Pour dressing over the salad and add lemon zest and lemon juice.
  4. Gently toss until all ingredients are combined.
  5. Top with chopped pistachios, additional mint leaves, and a sprinkle of flaky salt just before serving.

  • If preparing ahead, store components separately and assemble just before serving.
