Ingredients
  

  • 5 ounces arugula about 5 cups
  • 1/3 cup Parmesan cheese, shaved into large pieces
  • 3 tablespoons chopped sunflower seeds or nuts (walnuts, pecans, or pistachios)
  • 1 tablespoon fresh herbs like chives, parsley, or tarragon optional
  • 4 medium carrots, shaved into ribbons optional
  • 1 pint cherry tomatoes, halved optional
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt

Method
 

  1. Place arugula and any optional vegetables in a large bowl.
  2. In a small bowl, whisk together lemon juice, balsamic vinegar, olive oil, and salt until well combined.
  3. Drizzle enough dressing over the arugula to lightly coat the leaves.
  4. Toss gently to distribute the dressing evenly.
  5. Top with Parmesan shavings, chopped seeds or nuts, and fresh herbs.
