Ingredients

  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon ground cumin
  • 1 clove garlic minced
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

  • 1 tablespoon fresh cilantro finely chopped, optional
  • ½ teaspoon lime zest optional
  • ¼ teaspoon cayenne pepper optional, for extra heat

Method
 

  1. Combine olive oil, lime juice, and apple cider vinegar in a medium bowl.
  2. Stir in chipotle chili powder, ground cumin, and minced garlic, mixing thoroughly to prevent clumping of spices.
  3. Add honey, then season with salt and pepper to taste.
  4. Whisk vigorously for about 30 seconds until the dressing emulsifies and becomes slightly thickened.
  5. Taste and adjust seasoning if needed, adding more lime juice for tanginess, honey for sweetness, or chipotle powder for heat.
  6. If using optional ingredients like cilantro or lime zest, fold them in now.
  7. Serve immediately or transfer to an airtight container and refrigerate.

Notes

  • For a vegan version, substitute maple syrup or agave nectar for the honey.
  • The dressing will keep in the refrigerator for up to 7 days in an airtight container.
  • Shake well before each use as natural separation will occur.
  • For a creamier version, blend in half an avocado or 2 tablespoons of Greek yogurt.
