Ingredients
  

  • 3 carrots washed and roughly chopped
  • 1 small white or yellow onion peeled and roughly chopped
  • 2- inch knob of fresh ginger washed and trimmed
  • 1/2 tablespoon honey
  • 1/2 cup soy sauce
  • 3/4 cup rice vinegar
  • 1/4 cup olive oil

Equipment

  • Blender
  • Cutting board
  • Knife
  • Glass jar for storage

Method
 

  1. Add all ingredients to your blender: carrots, onion, ginger, honey, soy sauce, rice vinegar, and olive oil.
  2. Blend on high speed until completely smooth, about 30-60 seconds.
  3. If needed, add 1-2 tablespoons of water to thin to desired consistency.
  4. Transfer to a glass jar and refrigerate until ready to use.

Notes

  • Store in an airtight container in the refrigerator for up to 1 week.
  • Separation is normal - just shake before using.
  • For a miso variation, add 1-2 tablespoons of white miso paste.
  • Make it vegan by substituting maple syrup for honey.
