  • 3/4 cup fresh herbs cilantro, parsley, mint, dill, basil, or a combination
  • 2 fat garlic cloves
  • 2-3 slices jalapeño optional
  • 2 tablespoons lemon juice
  • 1/2 cup tahini paste well-stirred
  • 3 tablespoons olive oil
  • 1/2 cup water
  • 1/2-1 teaspoon salt to taste

Method
 

  1. Combine water, lemon juice, olive oil, garlic, herbs, jalapeño (if using), and 1/2 teaspoon salt in a blender.
  2. Pulse briefly to break down herbs without fully pureeing them.
  3. Add tahini paste and blend until creamy while maintaining some herb flecks.
  4. Taste and adjust salt, lemon juice, or heat as desired.
  5. Thin with additional water if needed for desired consistency.

  • For the freshest flavor, use a combination of herbs like parsley, cilantro, and mint.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Sauce may thicken when chilled; thin with water as needed before serving.
