  • 1 head radicchio
  • 1 pear halved and thinly sliced
  • 1 navel orange peeled and segmented
  • 1 shallot thinly sliced
  • 1/2 cup walnuts roughly chopped
  • 1/4 cup feta cheese crumbled
  • 1 garlic clove minced
  • 1 lemon juiced
  • to taste kosher salt and black pepper
  • 1 teaspoon sumac
  • 2 tablespoons honey
  • 1/4 cup extra virgin olive oil

Method
 

  1. Core the radicchio and separate the leaves. For less bitterness, soak leaves in cold water for 30 minutes, then dry thoroughly.
  2. Arrange radicchio leaves on a serving platter and top with orange segments, pear slices, shallots, walnuts, and feta.
  3. In a small bowl, combine garlic, lemon juice, salt, pepper, and sumac. Add honey and whisk together.
  4. While whisking, slowly drizzle in olive oil until dressing is well emulsified.
  5. Pour dressing over the salad just before serving and gently toss to coat.

  • For best results, assemble this salad right before serving.
