- Core the radicchio and separate the leaves. For less bitterness, soak leaves in cold water for 30 minutes, then dry thoroughly.
- Arrange radicchio leaves on a serving platter and top with orange segments, pear slices, shallots, walnuts, and feta.
- In a small bowl, combine garlic, lemon juice, salt, pepper, and sumac. Add honey and whisk together.
- While whisking, slowly drizzle in olive oil until dressing is well emulsified.
- Pour dressing over the salad just before serving and gently toss to coat.
