  • 1 teaspoon honey or maple syrup for vegan option
  • 1/4 cup water
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic minced
  • Salt and freshly ground black pepper to taste

Method
 

  1. Combine the apple cider vinegar, Dijon mustard, honey, water, and minced garlic in a medium bowl.
  2. Whisk the mixture until completely smooth and the honey is fully dissolved, about 30 seconds.
  3. Slowly drizzle in the olive oil while whisking continuously to create a properly emulsified dressing.
  4. Season with salt and freshly ground black pepper to taste, starting with 1/4 teaspoon salt.
  5. Taste and adjust sweetness or acidity if needed by adding tiny amounts of honey or vinegar.
  6. If using any optional herbs or seasonings, whisk them in now and allow flavors to meld for at least 5 minutes before serving.
  7. Transfer to a glass jar with a tight-fitting lid and refrigerate until ready to use.

Notes

  • Shake well before each use as the dressing will naturally separate.
  • For a smoother texture, blend all ingredients in a small blender or with an immersion blender.
  • This dressing keeps well in the refrigerator for up to one week.
  • For meal prep, make a large batch but consider adding fresh garlic to individual portions to prevent the garlic flavor from becoming too strong.
