Method
 

  1. In a medium bowl, combine the fresh orange juice, honey, apple cider vinegar, Dijon mustard, sea salt, and freshly ground black pepper. If using optional ingredients, add the orange zest, minced garlic, and thyme leaves at this stage.
  2. Whisk vigorously until the mixture is smooth and the honey has completely dissolved. The mustard will help begin the emulsification process.
  3. Slowly drizzle in the olive oil while whisking continuously. This gradual addition is crucial for proper emulsification, creating a smooth, unified dressing rather than separated layers.
  4. Taste and adjust seasoning if needed. You may want to add more salt, pepper, or a touch more honey depending on the sweetness of your oranges.
  5. For the smoothest texture, transfer the mixture to a blender or use an immersion blender for 20-30 seconds until completely emulsified. This step is optional but creates a silkier consistency.
  6. Use immediately on your favorite salad, or transfer to an airtight container for storage.

  • The dressing will naturally separate when stored - simply shake well before using.
